Peanut Butter Cookies

 

This is Rose's variation, based on a recipe from Seven Secrets.

 

Ingredients

In food processor:

• 2 Cups dry roasted peanuts (without salt)

1 Cup slightly more old fashioned rolled oats

1/2 teaspoon of salt

Run food processor to make it all about the same in appearance.

1/2 Cup Honey

 

Directions

Warm honey till it flows well (I do it in a small pan on the stove.)

Pour the honey into the mix in the food processor and process until you have a stiff mixture.

I use a cookie scoop that is about an 1 1/2 inches across.

Place on partchment paper or mat on a cookie sheet 

I roll them into balls with my hand and then flatten all of them. You can use your fingers or fork. You May slightly wet you fingers. (Less trouble with the dough sticking to your fingers.)

 

Baking

Bake in 350 degree oven 7-10 minutes maybe a little longer. In a convection oven 8 minutes is about right but a gas oven maybe 10+. Just watch them so they don’t burn. You want them to be slightly golden. 

Let them cool on cookie sheet before taking them off.

 

Further Thoughts

I can make a double batch in a 7 cup food processor. It is very full but works.
