Gluten: Veggie Chicken-like Shreds

 

Rose's Adaptation of a recipe found.

Ingredients

1 block extra firm Tofu

1 C broth (made with Golden Seasoning)

2 TBS Nutritional Yeast

1 1/4 tTBS Golden Seasoning (Rose’s Golden Seasoning on the website)

1 1/4 tsp Salt

1/2 tsp Onion Powder

1 1/2 C Vital Wheat Gluten

Directions

Directions: Golden Seasoning (Rose’s recipe or other).

Golden Seasoning Ingredients

1/2 C Soy Flour

1 1/4 C Nutritional Yeast

1/4 C Onion Powder

1/4 Sea Salt

2 Tbsp Italien Herbs or Herbes de Provence

1 Tbsp Garlic Powder

1 Tbsp Tumeric

1/2 tsp Rosemary

3-4 Tbsp Parsley

Golden Seasoning Directions

Combine all ingredients in food processor. 

Blend until smooth.

 

Directions: Broth for gluten.

1 TBS golden seasoning
1 C of Water
You can also use your favorite vegan broth.

 

Directions: Broth to use in the pot to cook the gluten.

This can be made with the ingredients that follow, or 6 C of a broth of your choice.
6 C of water.
2 TBS of Golden Seasoning.
1 TBS of Bragg Liquid Aminos

 

Directions: Dough

1. Mix the dry ingredients together large bowl.

2. In blender mix up the tofu and broth until it is smooth. 

3. Add wet ingredients into bowl with dry ingredients.

Mix until dry is fully incorporated.

Use your hands as necessary in the incorporating process.

4. Let it sit for fifteen minutes.

This would be a good time to prepare the broth you will later use to cook it in.

5. Make one long log about 24 inches.

Let it sit for another 15 minutes.

It will not feel like it is holding together very well, but that is fine. This is not regular gluten and will not feel as rubbery.

6. Fold the log

Fold the log length in half to 12 inches approximately.

Then twist the two parts together.

Tie it into a knot and tuck the ends into the loop at the other end.

7. Bring broth in pot to a boil and place the knot in the boiling broth. If it opens up it won’t be a problem.

Let the broth return to a boil, then turn it down to a simmer

8. Cook for twenty minutes.

Turn over the knot and let it cook another twenty minutes.

9.. Remove from the knot from pot and place in large bowl. 

Let it cool until you can handle it.

10. Use two forks to shred the knot once it is cool into chicken-like shreds. You can also use your fingers, but the forks work well.

It will be ready to be used at this point, or frozen.

It freezes well.

 

Final Preparation for Eating

1. Preheat oven to 350.

2. When Rose uses it, she finds it best to make a little marinade with • a little olive oil,

• some Bragg Liquid Aminos,

• and a bit of onion powder mixed into it.

She does not measure these ingredients.

3. Toss the chicken-like strips in the marinade like you would a salad..

4. Add the marinated strips into a non-stick roasting pan, and add to the pre-heated oven.

5. Let them bake in the oven until they become just slightly crispy, but still slightly moist.

They can be tossed if necessary, but it is also okay if they are not tossed.
